There were 35 of us eating here last night so something that worked in a slow cooker and could be served with rice cooked in our industrial-sized rice cooker was the order of the day. There are lots of sausage recipes on my blog- they are cheap and good for feeding lots of people so I use them regularly. Here is the smoky sausage casserole recipe I cooked as one option last night – I’ve listed the recipe below for 4 people. Continue reading

Sausage and Butter Bean Casserole
Sausages are a bit of a staple in our house – as you can probably tell by the disproportionate number of sausage recipes on my blog. We all really like them and even decent ones can be quite reasonably priced. They’re also really versatile – you can do lots of things with them. Here’s a recipe for (yet another) sausage casserole. This time it’s with butter beans – any type of beans with sausages are a great combination. Continue reading
Sausage and bean pot
My boys love sausages and baked beans, and this recipe has bacon in it as well which I think is a really good combination ( I always used smoked bacon in recipes as I think it adds more flavour). This is a good weekday supper – and seems to go down really well with children which is always a bonus! Serve it with some really cheesy mashed potato – yum!
If you want to cook it in a slow cooker then, as usual, put all the ingredients (except the beans) in raw and then cook on high for 8 hours. I usually cut the sausages into pieces – scissors are much easier than a knife for this job. Add the beans for the last couple of hours as they only need heating and you don’t want them to go mushy. Take the lid off for these last 2 hours if it looks like there is too much liquid.
